What a blast to be healthy
This is not the first time I'm writing about the site called mediterrasian. It promotes a "mediterrasian" lifestyle as being healthy, saying you should meditate and get enough sleep (I'm all for sleeping enough) but most important, it has a collection of truly mouthwatering and healthy recipes. What's not to love about that? I'll try them all and feel unbelievably good about myself. There are a number of gorgeous-sounding (and looking) salads but now that the weather is often cold and wet I'm usually in the mood for something warm and comforting. Such as a
Lentil, pea and potato curry (serves 2)
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 1 garlic clove, minced
- 2 teaspoons fresh ginger, grated or very finely chopped
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 0.5 teaspoon ground cinnamon
- a little dried chili, crumbled
- 1 large potato, peeled and cut into chunks (sweet potato would be nice, too)
- 50g red lentils
- 1 400g-can chopped tomaotes
- 2 dl coconut milk
- 2 dl vegetable stock
- 1 teaspoon garam masala
- salt
- 1 teaspoon brown sugar
- 2 large handful frozen peas
- some chopped herbs such as coriander or parsley
- 1 tablespoon lemon or lime juice
