What a blast to be healthy


This is not the first time I'm writing about the site called mediterrasian. It promotes a "mediterrasian" lifestyle as being healthy, saying you should meditate and get enough sleep (I'm all for sleeping enough) but most important, it has a collection of truly mouthwatering and healthy recipes. What's not to love about that? I'll try them all and feel unbelievably good about myself. There are a number of gorgeous-sounding (and looking) salads but now that the weather is often cold and wet I'm usually in the mood for something warm and comforting. Such as a

Lentil, pea and potato curry (serves 2)

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • 2 teaspoons fresh ginger, grated or very finely chopped
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon ground cinnamon
  • a little dried chili, crumbled
  • 1 large potato, peeled and cut into chunks (sweet potato would be nice, too)
  • 50g red lentils
  • 1 400g-can chopped tomaotes
  • 2 dl coconut milk
  • 2 dl vegetable stock
  • 1 teaspoon garam masala
  • salt
  • 1 teaspoon brown sugar
  • 2 large handful frozen peas
  • some chopped herbs such as coriander or parsley
  • 1 tablespoon lemon or lime juice
Heat the olive oil in a large pan and cook the onions until lightly browned and very soft. Add the garlic, ginger, coriander, cumin, turmeric and chili and cook for another minute, stirring. Add the potato and lentils, a sprinkle of salt and stir. Add the tomatoes, coconut milk, stock, garam masala and sugar. Bring to a boil then lower the heat and simmer, covered, for about twenty minutes, stirring occasionnally. Add the peas and simmer for another five minutes. Add the lemon or lime juice and herbs. Season with more salt and maybe some pepper to taste. Serve on its own or with a bowl of perfume rice if you're very hungry.
